Ok darlings. So I am all in for those healthy type of diet foods. After all, one has to sacrifice taste, quantity, and umm... pretty much everything, if you want to keep up with that gorgeous figure and ooh, those biceps. Oh yeah, I am talking about you handsome. *wink wink*. But one look at those oat grains set my glands working, and not in a good way.
But well, a need to keep up with my gorgeous toned body *blush blush*, forced me to reconsider my priorities. I was told, time and again, to start eating oats but I could not stand the thought of tainting my pretty insides with those gruesome looking things.
Ahh...But then my sharp mind gave me the idea of including these healthy yet non-attractive (I wonder if those two are almost, always synonymous) oats in my food in a way, which makes them appealing to my eyes as well as digestive system. 15 minutes of puttering around in the kitchen, and voila, a gorgeous and awesome tasting soup was the result. So, take a look gorgeous people, while I sit and enjoy my hot and healthy soup. Muah!!
Ingredients
2 tablespoons olive oil
1 cup oats
5 large tomatoes, halved and sliced
1/2 onion, chopped
1 clove garlic, chopped
2 green chillies
3 cups water, divided
1/2 bunch fresh coriander leaves
1/2 teaspoon salt
Method
1. Heat a non-stick pot over medium-low heat. Pour in the olive oil, and let it heat up. Add the oats; cook and stir until toasted.
2. In a blender, combine the tomatoes, onion, garlic, chillies, 1 cup of water, and coriander leaves. Blend until smooth.
3. Pour into the pan with the toasted oats. Stir in the remaining 2 cups of water, and bring to a boil.
4. Mix in the salt.
5. Cover, and simmer for 15 minutes.
Enjoy hot or warm.
