Quick Orange Pulp Cake



My friends have a wide variety of talents imbibed in them. While some consider photography their asset, for others looking at photographs clicked by others is a great talent in itself! One of these friends is a former student of mine in cooking and is showing great talent in the kitchen, if I say so myself!

The mother of my talented friend wanted to drink a glass of orange juice. Now, my innovative friend could not stand the thought of serving her mother a glass of plain orange juice. Therefore, she set her mind to work and created a quick and innovative ‘Orange Pulp Cake’ that literally blew away the minds of her family members.

Lucky enough to try out a slice of the yummilicious cake, I can say for a fact that my eyes filled with happy tears at the pure creativity and finesse shown by my former student. Excited to share her innovation with my readers, here is the recipe of this quick and easy to make ‘Orange Pulp Cake’. Do let me know how it was!

INGREDIENTS:

•  Maida – 2 cups
•  Curd – ¼ cup
•  Sugar – 1 cup
•  Orange pulp - 3
•  Milk Powder or Milkmaid – 1 cup
•  Orange flavour essence
•  Orange Juice – ½ cup
•  Baking powder – ½ tsp
•  Baking soda – ¼ tsp

METHOD OF PREPARATION:

•   Dilute the sugar in orange juice.
•   Mix the maida and curd in a separate bowl.
•  Add the milk powder and orange pulp in the mixture and blend well.
•  To this mixture add the orange juice with the dissolved sugar. Blend well for 5 minutes.
•  Finally add the orange essence, baking powder and baking soda. Mix well.
•  Pour the mixture in a baking tin lined with ghee and maida.
•  Bake in an oven for around one hour or till the knife you put in the centre of the cake comes out clean.
•  Serve hot.
