Chocolate Muffin mania



Who can say no to a delicious chocolate creation, especially if it comes in the form a warm, fudgy and gooey muffin? Certainly not me! I have a soft spot for all bakery items to do with chocolate. So I make a special effort to find out all there is to do with chocolate and cakes.

Now, one of the most common factors that I have come across about baking is that it requires too much of time and effort. However, this particular chocolate muffin recipe takes a surprising 20 minutes to assemble and a further 20 minutes to bake. According to my estimation, this makes the recipe one of the quickest baking recipes I have come across.

While I had this recipe in mind for a long time, I decided to surprise my younger sister on her birthday, who has a tooth sweeter than mine, if that is even possible. The look of ecstasy on her face when she walked in the door and got her first whiff of those delicious looking muffins was worthy enough of the effort that went behind making this treat.

INGREDIENTS (For 12 muffins):

•  Unsalted butter – ½ cup (110 gms)
•  Eggs (Large) - 2
•  Buttermilk (If not available then you can use milk) – 1 cup (240 ml)
•  Vanilla extract - 2 tsps
•  Flour – 1 ¾ cup (230 gms)
•  Unsweetened Cocoa powder (Or Chocolate powder) – 2/3 cup (60 gms)
•  Sugar (Powdered) – 1 ¼ cup – 265 gms
•  Baking powder – 1 tsp
•  Baking soda – 1 tsp
•  Salt – ½ tsp
•  Chocolate chips (You can use pieces of Dairy milk chocolate) – 1 cup

•  Muffin tray

METHOD OF PREPARATION:

•   Preheat oven to 190 degrees Celsius.
•   In a steel vessel, whisk together the melted butter, eggs, buttermilk and vanilla extract.
•   In another bowl whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
•  Stir in the chocolate chips in the second bowl.
•  With a rubber spatula mix the wet ingredients in the dry ingredients.
•  Stir till all ingredients are combined. Do not mix too much or the muffins will come out hard.
•  Line a muffin tray with flour. Scoop out the mixture and pour in equal portion in the muffin tray, using spoons or an ice cream scoop.
•  Put in the preheated oven. Bake for 20 minutes or till a toothpick inserted in the centre of muffin comes out clean.
•  Cool for 5 minutes and remove muffins from the tray.
•  Serve hot.
