Gujarat Special - Instant Handwa!!



What comes to your mind when you think of trying different cuisines? Italian, Chinese or even Mexican, I bet! But one thing we all forget is the wide variety of cuisines our own country has to offer.

Tired of eating the same old roti and vegetable every day, I was talking to one of my Gujju friends from college. Exchanging notes on how boring it was to eat the same old cuisine every day, she told me about a dish her family liked in particular. Asked to prepare it for breakfast at least twice every week, she complained how she would like to never hear about the dish again. But to me, the dish sounded an ideal combination of simplicity, quick preparation, and yummy taste.

I surprised my roommate with my own take on the Gujarati speciality, which I titled ‘Instant Handwa’! Judging by the reaction, even my Italian cuisine crazy roommate was amazed. Do try this dish out and bow down to the greatness of Indian cuisine. Enjoy!!

INGREDIENTS:

•  Suji – 1 cup
•  Curd – 1 cup
•  Capsicum (finely cut) – ¼ cup
•  Onion (finely cut) – ¼ cup
•  Carrots (finely cut) – ¼ cup
•  Peas – ¼ cup
•  Potato (boiled and finely cut) – 1
•  Baking powder – ½ tsp
•  Mustard seeds (Rai dana) – 1 tsp
•  Kari Patta – 10-12 leaves
•  Oil – 4 ½ tsp
•  Eno – 1 packet
•  Salt, Chilli – According to taste

METHOD OF PREPARATION:

•   Mix the suji, curd, vegetables, baking powder, salt and chilli in a bowl.
•   Add the packet of eno and a little water to make a smooth batter.
•   Pour the mixture into a cooking vessel (kadhai). Cover the vessel and cook on a high flame for 2 minutes.
•   Cook on low flame for another 15 minutes.
•  Carefully invert the dish onto a serving plate. Serve hot with chutney.
