Cream of Corn Soup Recipe

Ahh.... My love for corn is a forever and ever kinda thing. No, I can never get over it. And yes, I know it adds fat. But that’s what makes it even more desirable darling! The forbidden fruit and all that kind of stuff you see. *wink wink*

Khair, so I decided that I was sick of eating the traditional sweet corn soup that has been a part of the Indian restaurant’s menu since my great grandfather’s time (at least). I decided to twist and turn the corn soup in a manner that would be unique and would add creaminess and thickness to the rather bland original sweet corn soup.

Clever me! The first ingredient I hit upon turned out to be perfect *Clap clap*. Milk. Now now, don’t make that face sweeties. Trust me on this. A fifteen minute preparation time and an amazing soup, which will make you burn your tongue. Yes my simpletons, I mean that it is so tasty you will just not be able to stop yourself from devouring it in one big gulp.

INGREDIENTS:

•  Ghee – 1 tsp
•  Maida - 1 tbsp
•  Milk – 1 bowl
•  Salt – 1 tsp
•  Black pepper – a pinch
•  Boiled corn - 4 tbsp

METHOD TO PREPARE FILLING:

•   Warm the ghee in a frying pan. Put the maida and mix it in the ghee till it becomes a golden brown colour.
•   Set it aside and let the mix cool.
•  Add a little bit of milk and mix it well.
•  Set the pan on fir. Add the rest of the milk, salt and black pepper. Mix well.
•  Add the corn and mix for a short time, till you get the consistency you desire in the soup.
